Flat one side, ridged the other
The gasket is flat on one face and carries a raised o-ring style extension on the other. That shape is the whole point: the flat side beds against one union half while the raised ridge concentrates the clamping load into a narrow band on the other, which is what makes the joint seal at low tightening force. It also means the gasket has a right way round, so note the orientation of the old one as it comes out.
Dimensions to check
Outside diameter is 2-15/16 inch, inside diameter is 2-1/8 inch, and thickness is 3/32 inch across the flat section or 3/16 inch measured over the ridge. Compare those against the gasket you are replacing, because a union that looks like a 2 inch union is not always dimensionally identical. A seal that is old, hard or has taken a permanent set will not recover, and no amount of tightening will make it hold.
